How is tofu classified in terms of food groups?


Q. How is tofu classified in terms of food groups? Is it considered a fresh or processed vegetable since it comes from soybeans?


A. Tofu is a vegetable protein. Even though it is derived from a plant (soybeans) it is processed into a protein food. Therefore tofu is grouped with meat and eggs. However, tofu does not contain cholesterol making it a healthy protein option. Try this great recipe: Leafy Tofu, or try adding tofu to any recipe you would put meat in such as spaghetti or a stir-fry.
