Are all vegetables including potatoes safe to eat raw?Which ones have skins that are not edible?

Most vegetables are safe to eat raw, and the peels of many can be eaten if they are washed well. While it is safe to eat them raw, some, like potatoes, artichokes, dried peas and beans, and a few tropical ones like breadfruit, plantains and true yams are much more easily digested when cooked. They are also easier to chew and more palatable.
