Are cooked vegetables as nutritious as raw ones? If not, why not?

Cooked vegetables may lose some nutrients in the cooking process. Using as little water as possible when cooking will help retain the water soluble vitamins. There are certain veggies, such as tomatoes which when cooked make lycopene more available. Lycopene is an antioxidant that may help to prevent prostate cancer. So it’s a great idea to eat mix it up a little and eat some vegetables raw and some vegetables cooked.
