Can you help me identify a vegetable used in Szechuan cooking?


Q. What kind of veggie is this? Used in Szechuan cooking. Beige, looks like it grows as a shoot, but inside there are individual compartments if you slice it lengthwise


A. Szechuan cuisine utilizes many herbs, spices, vegetables, meats, and starch, like noodles or rice.  The beige vegetable you may be referring to is lotus root. In Asian cuisine, all components (flowers, seeds, young leaves, and roots) of lotus root are edible.
