Can you eat Beet Greens, the leaves etc.

Yes, beet greens are edible, and quite delicious!  It is recommended to trim off the stems because they can be tough.  Remember to wash the greens thoroughly before using.  Try swapping them in a recipe that calls for collard greens or kale.  A quick and simple way to prepare them is sauteing in a little bit of olive oil along with onions and garlic.  Season with salt and pepper, and enjoy!
