Casseroles To Start Your Christmas Morning

Christmas mornings were made for big breakfasts with family.  Let’s face it …you work up quite an appetite unwrapping all those gifts Santa brought, right?  One way to feed a large crowd is with breakfast casseroles.  You can combine several delicious ingredients into one dish, minimizing mess in the kitchen and clean up time.  For this week’s blog I’ve collected a few breakfast casserole recipes that would be perfect to serve at your Christmas morning table.

 

Spinach, Artichoke, and Feta Breakfast Bake is one that you can even prep the day ahead to make things easier.  Ingredients include frozen, chopped spinach, chopped scallions, canned, chopped artichokes, eggs and egg whites, fat free milk, parmesan cheese, feta cheese, minced garlic, chopped dill, diced red pepper, salt, and black pepper.  Combine the spinach, scallions, artichoke, red pepper, garlic, and dill, then spread into a casserole dish.  In another bowl, combine the eggs, egg whites, milk, parmesan, feta, salt, and pepper. Pout over vegetable mix and bake at 375 degrees for 35 minutes until done.

Turkey and Egg Casserole is a combination of ground turkey, eggs, sweet potato, spinach, chili powder, salt, and pepper.  You’ll begin by cooking your turkey with the chili powder, salt, and pepper until browned.  Line a casserole dish with thinly sliced sweet potatoes and then top with the browned turkey.  Layer whisked eggs on top and then place the baby spinach and any other toppings you might like (chopped tomato or asparagus).  Bake at 375 degrees for 35-40 minutes until firm.

Veggie-Loaded Breakfast Casserole is exactly what it sounds like and is easily customizable to what you like.  This version calls for eggs, mushrooms, baby spinach, shredded potatoes, red onion, bell peppers, garlic, half and half, hot sauce, and shredded cheese.  The idea is to slightly saute your veggies and set aside, Layer the shredded potatoes into a casserole dish and then top with the veggies.  Next, top with the eggs, hot sauce, and half and half, which have been whisked together.  Finally, top with shredded cheese and bake in a 375 degree oven for 45-50 minutes.  Allow the casserole to cool for 10 minutes before slicing.
