As fruits and vegetables become older and spoil they do breakdown a small amount of nutrients. However, the amount of nutrients that is broken down is minimal. Fresh fruits and vegetables should be consumed within a few days of purchase to guarantee the best quality. If you are unable to eat them this quickly, freezing them is also a good option to preserve their nutritional value. The most important thing is that you are eating your fruits and vegetables!
