Is endive more nutritious raw or cooked?


Q. Is it better to serve endive cooked or raw, to consume the most phytonutrients and vitamins?


A. Cooking vegetables can reduce the amounts of some vitamins (like vitamin C), but can make other nutrients more easily used by your body (like lycopene in tomatoes). If you prefer cooked endive instead of raw, cooking it quickly is best. Cooking on the grill, in a stir-fry, sautéed or baking are ways endive can be enjoyed.
