Hello, I have 2 questions. 1 – I read in a magazine that one can store vegetables in a glass jar. Is it true? And if it is, then can different vegetables be stored together in one jar , with a closed lid or not? 2 – Are there any nutritions left in fruits and vegetables (fresh or cooked) if they have been stored in the refrigerator for a longer period of time than recommended (1-1.5 weeks after purchase, for example). Thank you.

You can store cooked vegetables in any type of container in the refrigerator; it is recommended that they be covered.  Most fruits and vegetables, whether fresh or cooked, will lose nutrients and quality over time.  Cooked vegetables likely will not be good after a week or so.  With proper storage, some fresh fruits and vegetables will last that long, depending on the quality and length of time since picking.  Root vegetables such as potatoes or turnips, and a few fruits such as apples, can be stored for longer periods of time and will lose nutrients less quickly than fresh produce that spoils more quickly, such as peaches or pears.   Keep in mind that canned and frozen fruits and vegetables are also good options as well.
