Hi, Are potatoes good for us? I was told that they stay in our system for a long time. Please clear this up for me. Thank You

Potatoes are a good staple food. They are a good source of Vitamin C and Potassium, fat- free and contain some fiber. Eaten without the skin, they are quickly and easily digested. With the skin, the fiber slows digestion so nutrients are absorbed more slowly. This is better for overall health. When fat is added to potatoes (butter, sour cream) or they are fried (potato chips, French fries) this makes them much less good for us.
