When making grilled cheese for my 3 kids, I grate fresh carrot between 2 slices of cheese – about 1/2 a carrot per sandwich. The kids have no idea because the color of the carrot and cheese all blends together.

actually this is a good idea for adults as well, who have usually reached an age where they love carrots and this just provides another way to eat them.
Also try thin slices of fresh apple between 2 thin slices of cheese as a grill cheese. Just delicious !
Grating is a great technique for all kinds of foods. You can grate zucchini into muffins, and grate lots of different vegetables into pasta sauces, too! Of course, if the kids help you cook, they might be more inclined to taste the foods, and you won’t have to resort to being sneaky
