How do I know which fruits and veggies lose their nutrition when cooked? I often use recipes that incorporate cooking veggies into things like meat, soups, crock pot cooking, etc. however, I question if there is any nutrition value left after they cook. I hate cooked fruits alone and I also hate steamed veggies. The only way I can really incorporate veggies is if I chop them up and cook them inside of things like meatballs, etc.

There may be some losses of nutrients from all fruits and veggies when they are cooked, although the losses are usually small. When incorporating fruits and veggies into soups, stews, one-dish meals etc. you may actually be retaining some of the nutrients in the liquid. You will get the nutrition benefits of fruits and veggies whether they are raw or cooked.
