i am doing a nutritional analysis on a recipe using baby artichokes. i am starting out with 12 (~1.5 pounds). WHat should I count as the edible portion weight….approximately. THANKS!

According to the Food Buying Guide for Child Nutrition Programs issued by the Food and Nutrition Service, one pound of artichokes As Purchased equals 0.23 pounds of cooked, drained artichoke, about 1/3 cup cooked artichoke from bottoms only, and about 2/3 cup cooked, drained artichoke bottoms and leaves. Hope that helps.

  1. I don’t believe the Food Buying Guide had Baby Artichokes in mind with the net weight of only .23 lb. Sounds more like nhe Globe Artichoke to me with its waste of the prickly bottom and tough outer leaves and leaf ends.
