I read that if you eat fresh carrots with other vegetables, you have to add vinegar, otherwise the fresh carrots will destroy the vitamin C present in the other vegetables. Is this true?

No, this is not at all true. It is fine to eat fresh carrots with other vegetables, such as in a salad or in a stir-fry.
