I thawed frozen corn and after a week it is still sitting in the refrigerator..can I still cook it?

I would not. The quality of frozen vegetables is best when they are cooked from the frozen state, or immediately after thawing. After a week in the refrigerator the corn is probably spoiling and may not be safe to eat (even if you cook it). A good rule of thumb is “when in doubt, throw it out”.
