I want to cook a hardy healthy roast beef dinner for my family, but seeming as I have never cooked roast beef what vegatables could I use to bring out more natural and refreshing tastes?

Many vegetables go nicely with beef. If you have a cut of beef that only needs baking rather than a tougher cut that needs to be stewed or braised, you could try just using a spice rub and serve with a colorful variety of roasted vegetables, which could be done while the roast beef is cooking. If you need to use a liquid to tenderize the beef, such as a stew, try browsing a cookbook for different ideas. Traditional stews use broth and/or tomatoes with a variety of vegetables. Potatoes, onions, carrots and green beans are always a good start,
