I’m looking for vegetable only breakfast menus. Can you help?

Vegetables can be included at breakfast in any way that you would enjoy them.   Vegetables are great in omelets, can be used in a wrap or on a sandwich, as a salad or in soup.  Vegetable juice is also a great option. If you are looking for vegetarian/ vegan options, you could try various nut butters such as soy nut butter, almond butter, peanut butter, etc. on toast or crackers, or on top of celery sticks or cucumber slices.  Bean spreads such as hummus on vegetables, crackers or in pita bread with tomatoes and cucumbers would also be a delicious options.  Tofu can be scrambled with vegetables to create a vegan omelet. A garden burger would also be another menu idea.  There are numerous vegetarian and vegan products such as sausages and burgers that can be found in the grocery store.
