Is it safe to eat sweet potatoes which have sprouted. i have them in the cupboard for about two weeks. i am aware that the nutrient content will diminish as they are stored longer. Thanks alot,

It is safe to eat those potatoes. Cut off the sprouts and use the potatoes as you would normally. The sprouts have used nutrients from the potato to grow, so have further reduced the nutrients available.
