Is the nutrional value of fruits & veggies altered through cooking, especially microwaving?

All vegetables lose some nutrients through the cooking process. Water soluble vitamins tend to leach out into the cooking water, so using as little water a possible is recommended. Steaming or microwaving are good methods.
