How to Select Jujube The fruit varies from round to elongated and from cherry-size to plum-size depending on the cultivar. The immature fruit is green in color, and the fully mature fruit is entirely brown. Choose fruit that is firm and free of blemishes or bruises. How to Store Jujube Once fully ripened (brown color), jujube may be stored at room temperature for up to 5 days.
