3 cups corn kernels, blanched

1 red pepper, diced

1 red onion, diced

2 cloves garlic, chopped

1/4 cup Italian dressing, low-fat

1 cup feta cheese, reduced-fat

1/2 tsp paprika

Salt and pepper to taste

lime wedge for garnish


  1. Preheat the broiler.
  2. In a broiler-safe dish, combine the corn, red pepper, onion and garlic. Toss to mix well. Season with salt and pepper to taste.
  3. Add the dressing and mix well. Crumble feta cheese over the mixture and sprinkle with paprika. Broil until the cheese starts to melt, 3-5 minutes.
