Oriental Sweet and Sour Vegetables

Cups of Fruits & Vegetables per Serving: 1 cup
Think Variety; Think Color: Red, Yellow/Orange, White, Green


1 Tbsp honey

1 Tbsp lemon juice 

1 tsp soy sauce, low-sodium

1/4 tsp ginger 

1 cup (8 oz) 100% pineapple or orange juice 

1 Tbsp cornstarch 

2 tsp olive oil

1 lb bag frozen stir-fry vegetables 


  1. Combine all ingredients except vegetables in bowl. Mix and set aside.
  2. Heat oil in skillet and add frozen vegetables. Cook for 3-4 minutes or until vegetables are crisp-tender.
  3. Add sweet and sour sauce and cook for another 2 minutes or until mixture comes to a boil. Serve.
