Pineapple Black Bean Salad

1 fresh pineapple

1 can (15 oz) black beans, low-sodium, rinsed and drained 

3 cups brown rice, cooked

1 cup bell pepper, chopped

1/2 cup celery, sliced

1/2 cup green onion, chopped

2 Tbsp white wine vinegar

2 Tbsp olive oil

2 tsp Dijon-style mustard

1/4 tsp salt

dash of pepper



  1. Twist crown from pineapple. Cut pineapple in half lengthwise. Cut pineapple into chunks.
  2. Combine pineapple chunks, beans, rice, bell pepper, celery, and onions in large bowl.
  3. Stir together olive oil, mustard, salt, and pepper in a small bowl.
  4. Spoon dressing over salad and toss lightly to coat. Serve.
