Dandelion Fruit Salad

Dandelion greens are an excellent source for vitamins A, K and C!

Cups of Fruits & Vegetables per Serving: 1 1/4
Think Variety; Think Color: Red, Yellow/Orange, White, Green


1/4 cup herb vinegar

2 Tbsp brown sugar

1 Tbsp olive oil

2 tsp soy sauce, low-sodium

1 tsp curry powder

1 clove garlic, minced 

5 cups dandelion leaves, torn 

5 cups red leave lettuce, torn

2 3/4 cups apple, coarsely chopped 

2 cups orange, sections coarsely chopped 

2 Tbsp toasted almonds, chopped 


  1. Combine vinegar and next five ingredients on list. Stir with a whisk until well blended. Set aside.
  2. Combine dandelion greens, lettuce, oranges, and apples in a large bowl. Toss gently.
  3. Add vinegar mixture, toss gently to coat. Sprinkle with almonds. Serve.
