Yam Salad

This is a delicious spin on potato salad!

Cups of Fruits & Vegetables per Serving: 1
Think Variety; Think Color: Yellow/Orange, White, Green



2 cups yams or sweet potatoes, peeled, cubed and cooked

3/4 cup green bell pepper, diced

5 Tbsp onion, diced

5 Tbsp celery, diced


4 tsp canola oil

3 tsp lemon juice

1/2 tsp pepper



  1. Wash and prepare vegetables.
  2. Combine yams, green pepper, onion and celery in a large bowl; set aside.
  3. Combine remaining ingredients in a small bowl, then pour over salad and toss to coat.
  4. Serve immediately or cover and refrigerate.
