Snowboard Swooshin Squash

You don't have to hit the slopes to enjoy this yummy squash dish.
1 cup yellow squash, sliced
1 cup zucchini squash, sliced
1/4 cup onion, chopped
2 teaspoons garlic, minced
1/2 teaspoon cumin
3 seconds butter-flavored cooking oil spray
2 tablespoons canned green chiles, diced
1/4 cup frozen yellow sweet corn
2 tablespoons fat-free sour cream
Lightly sauté the squash, zucchini, onion, garlic, and cumin until just soft with some cooking oil spray. Toss in the remaining ingredients. Place in a 1 quart casserole dish that has been sprayed with cooking oil. Microwave 3 minutes on HIGH or until thoroughly heated.
Each serving provides: An excellent source of vitamin C, and a good source of vitamin A, folate, potassium and fiber.
