Serves: 10
Cups of Fruits & Vegetables per Serving: 1
Think Variety; Think Color: Red, Yellow/Orange, White, Green, Blue


Nonstick cooking spray
1 yellow onion, diced
2 green peppers, diced
1 14.5oz cans stewed whole tomatoes
2 15 oz cans black beans
1 1/2 cups frozen corn
1 15oz can kidney beans
1/2 tablespoon chili powder
1 teaspoon cayenne pepper
1/2 teaspoon cinnamon
Salt and pepper to taste
2 fresh tomatoes, diced


Spray a large pot with nonstick cooking spray.

Saute the onions and peppers until they just begin to brown.

Add all the canned ingredients with the liquid from the cans, the corn and the chili powder, cayenne and cinnamon.

Bring to a boil.

Reduce heat and simmer for about 30 minutes or until the mixture reaches the desired consistency.

Ladle into bowls and top with diced tomatoes.

Each serving provides: An excellent source of fiber and Vitamin C.
