Dried Fruit and Almond Granola with Yogurt and Banana

3 Tbs. brown sugar, firmly packed
3 Tbs. honey
1 1/4 tsp. sesame oil
1/4 tsp. ground cinnamon
1/4 tsp. vanilla extract
1/4 tsp. almond extract
2 cups old fashioned oats
1/3 cup sesame seeds
1/2 cup whole natural almonds
1/3 cup almonds, sliced
1/3 cup cranberries, dried
1/3 cup golden raisins
vanilla yogurt, fat-free
4 bananas, sliced           


1. Place an oven rack in the middle of the oven and preheat oven to 350 degrees. Coat a rimmed baking sheet with cooking spray.

2. In a heavy medium saucepan, combine the brown sugar, honey, sesame oil, cinnamon, and vanilla and almond extracts. Cook over low heat, stirring, just until the sugar melts; remove from the heat. Add the oats and sesame seeds, stirring until coated. Spread evenly on the prepared baking sheet. Bake for 10 minutes.

3. Stir, then sprinkle the whole and sliced almonds over the top. Bake for 10 minutes longer, or until the almonds are lightly toasted. Cool completely in the pan. Transfer the granola to a large bowl and stir in the cranberries and raisins. Store in an airtight container up to 2 weeks.

4. To serve, spoon 1/2 cup yogurt into a bowl and top with 1/2 cup granola and 1/2 sliced banana.
