Northwest Cherry and Tropical Fruit Salad

1 cup (1 large) sweet onion, chopped
2 Tbs. pineapple juice
1 Tbs. cider vinegar
1 Tbs. honey (optional)
1/4 cup fresh basil, chopped
1/2 tsp. salt
1/8 tsp. black pepper, ground
1 large mango, peeled and sliced
1 cup sweet cherries, pitted and halved
1 cup Rainier cherries, pitted and halved
8 fresh pineapple spears   


1. Heat a large nonstick skillet over medium-high heat. Add the onion, pineapple juice, and vinegar; stir-fry for about 4 minutes, or until the onions are soft. Stir in the honey, basil, salt, and pepper. Remove from the heat and let cool.

2. In a 9 x 13 inch baking dish, place the mango in the middle of the dish, and the cherries and pineapple at either end. Spoon the onion mixture over the fruit and marinate at room temperature for about 1 hour. Serve at room temperature or refrigerate and serve cold.
