Strawberry Sangria Ice

2 pints strawberries, hulled
1/4 cup sugar
1 cup dry red wine
2 Tbs. fresh lemon juice
1 1/2 Tbs. frozen orange juice concentrate, thawed
slices of orange for garnish
mint sprigs, for garnish


1. In large bowl, crush one-fourth of the strawberries with the sugar with a fork or potato masher. Add the wine, lemon juice, and orange juice concentrate, stirring until the sugar dissolves; pour into a metal baking pan. Cover and freeze for about 2 hours, or until partially frozen. Stir with a wooden spoon to break up the ice; freeze for about 2 hours longer, or until firm.

2. To serve, set aside 8 strawberries for garnish. Cut the remaining berries in half. Place spoonfuls of the sangria ice into glasses, dividing it evenly and add the cut strawberries. Fill the glasses with sparkling water and garnish with the reserved whole strawberries, orange slices, and mint sprigs.
