Pasta w/ Spinach and Smoked Sausage

Cups of Fruits & Vegetables per Serving:

1/4   lb. cooked smoked chicken or turkey sausage, cut into 1/4 inch pieces
1      large leek, cut into 1/4 inch slices
2      cloves garlic, minced
1      tsp. olive oil
2/3   cup chicken broth
4      oz. roasted red sweet peppers, drained and cut into thin, bite-sized strips
8      cup Olivia's Organics Baby Spinach
6      oz. dried medium bowed-tied pasta
1/4   cup snipped fresh basil (or 1 tbs. dried basil, crushed)
1/4   cup shredded Parmesan cheese
1/4   tsp. cracked black pepper  


In a large skillet, cook leek and garlic in hot oil until leek is tender.

Stir in sausage, chicken broth, and roasted peppers.

Bring to a boil and reduce heat.

Add Olivia's Organics Baby Spinach.

Cook, stirring frequently, for 1-2 minutes or just until spinach starts to wilt.

Remove from heat.

Meanwhile, cook the pasta according to the directions on the package.

Drain and return pasta to the saucepan.

Add spinach mixture, basil, Parmesan cheese, and black pepper.

Toss to coat and serve immediately.
