Citrus & Sweet Potato Savory Galettes

1 large sweet potato, scrubbed

2 tsp (25 mL) chopped fresh rosemary

1 clove garlic, minced

1 egg

juice of 1 OUTSPAN orange

1 tsp (5 mL) salt

1/2 cup (125 mL) all purpose flour

1/2 cup (125 mL) milk

1/4 cup (50 mL) vegetable oil 


Prick potato several times with a fork.

Place on baking sheet.

Bake in preheated 400 ºF (200 ºC) oven for 1 hour or until tender.


Peel potato.

In bowl and using fork, mash until smooth.

Stir in rosemary, garlic, egg, orange juice and salt.

Stir in flour, then milk, to make a smooth, thick batter.

In large heavy skillet, heat 1 tbsp (15 mL) of oil over medium heat.

In batches, spoon 1 tbsp (15 mL) batter into pan to form each galette; cook for 2 minutes per side or until golden.

Place cooked galettes in warm oven to keep warm as you cook remaining batter.

Add more oil to pan between batches to prevent sticking.

Makes about 10 to 12 galettes.

Serving Suggestion

Serve galettes warm, with sliced smoked salmon and sour cream, if desired.
