Papaya and Black Bean Salsa

Appetizers, Dips & Salsa

Serves: 8
Cups of Fruits & Vegetables per Serving: 1/2
Think Variety; Think Color: Red, Yellow/Orange, Green, Blue


1 medium, ripe papaya, cut into small dice
1 cup cooked black beans, rinsed and drained
2 small red peppers cut into small dice
1 red onion, cut into small dice
2 jalapenos, minced
3 tablespoons chopped cilantro
2 teaspoons dried Mexican oregano
3 tablespoons minced fresh ginger
1 tablespoon plus 2 teaspoons olive oil
2 limes, juiced
1 teaspoon ground black pepper
1 1/2 teaspoons kosher salt
2 tablespoons orange juice   


Combine all ingredients and adjust seasoning.  Cover and refrigerate if not serving immediately.

Serving Suggestion: Papaya salsa is an excellent accompaniment for grilled fish, shrimp or chicken.  Enjoy as a dip with taco chips.

Each serving provides:
an excellent source of vitamin A, vitamin C; and a good source of fiber.
