Serves: 8
Cups of Fruits & Vegetables per Serving: 1/2
Think Variety; Think Color: Red, Yellow/Orange, White, Green


2 cups avocado ( or about 2 California Avocados)
1/2 teaspoon salt
3 tablespoons fresh lemon or lime juice
2 tablespoons minced cilantro
1/2 cup diced tomatoes
3 tablespoons chopped onion
7 oz. can corn, drained
1 jalapeno pepper, minced (optional)
1 clove garlic, finely chopped


Cut the avocados in half and remove the seed. 

Scoop out the pulp and place in a bowl. 

Drizzle the pulp with lemon or lime juice and mash. 

Combine with the remaining ingredients, mix well and serve.

Each serving provides: A good source of vitamin C, folate and fiber.
