My 8-year old son is picky eater and won’t eat his vegetables. What suggestions do you have?

Experts who have worked with children have found that sometimes you need to expose them to new foods 8-10 times before they will accept it.  Try involving your son in cooking, such as shucking corn or rinsing vegetables.  Encourage his involvement in food shopping and selecting one new fruit or vegetable to try.  Get his help in planning a week’s worth of menus.  Remember to make food look appealing and fun, such as making radish flowers or tomato roses to garnish a dish.  Keep portions small.
Color is one way to think about getting a variety of fruits and vegetables.  Try to select a fruit or vegetable from a variety of colors each day, such as red, blue/purple, green, white, and yellow/orange.
