Over the past months all the potatoes I buy turn green after just a few days. Are they still safe to eat?

Potatoes that turn green are producing protective chemicals, and if the potatoes are not otherwise damaged from cutting or bruising, it can be a sign that the potatoes are old and may be rotting. The highest levels are usually in the sprouts. If the amount of greening is extensive, they potato should not be eaten. Otherwise, they should be peeled to remove all green areas and the sprouts. Click here to see tips for buying and storing potatoes.
