The Everyday Chef: Grilled Sesame Shishito Peppers

Have you tried shishito peppers before? I ordered them for the first time a few years ago and was instantly hooked. They are a little smokey and roughly one in ten are spicy; making for a fun game of spice roulette when eaten with others.
The first time I had these peppers, they were grilled just enough to be slightly charred and flavored with toasted sesame oil and sesame seeds. So simple and delicious; exactly how summer cuisine should be. Not only is this recipe a fantastic snack, it’s also easily doubled or tripled for a crowd. If you need a quick entertaining idea, let these peppers be it.
You can grill these one of three ways. The first is by using an indoor grill pan on your stove; tossing the peppers with oil and grilling until lightly charred. If you have a grill basket, you can use that on an outdoor grill as the prep will be the same.
If you don’t have either a grill pan or a grill basket, you can skewer the peppers together on either soaked wooden skewers or metal skewers. Gently rub all over with sesame oil, then grill, turning as you go.
Sprinkle sesame seeds on the finished peppers and that’s it! Perfect as an entertaining appetizer, snack or side dish.

Grilled Sesame Shishito Peppers
1 tablespoon toasted sesame oil
2 teaspoons soy sauce
1 pound shishito peppers
1 tablespoon sesame seeds, plus more for garnish
Preheat outdoor grill or indoor grill pan to medium-high heat. If using an outdoor grill, you will need a grill pan/basket.
In a large bowl toss together the sesame oil and soy sauce. Add peppers into the bowl and toss to combine.
If using an indoor or outdoor grill pan, add peppers directly to grill pan and grill for 6-8 minutes, flipping occasionally with a pair of tongs. The peppers are done when they are blistered and slightly charred. Remove the grill basket and transfer peppers to a serving bowl and garnish with sesame seeds.
