Please provide a list of thin-skinned vegetables


Q. My doctor says to eat thin skinned vegetables. Can you name some for me please?


A. I’m not sure why your doctor wants you to eat thin-skinned vegetables, but other than hard-shell winter squash, most vegetables already have thin skins.  If you buy younger or smaller vegetables, their skins are typically more tender.
