What is the nutritional value of jimaca? I know it is a great source of fiber.

Jicama, a root vegetable, is often eaten raw or cooked and contains many beneficial nutritents. You are correct – they are a good source of fiber, as well as vitamin C.   1. Do you have any recipes using JIMICA? I have tasted this root vegetable only in the raw form. I am featuring this veggie for our nutrition class at work . The dietician wants me to have a dish prepared for 30 people.
