when fruits and veggies are frozen don’t they lose nutrients like vitamins and minerals?

There is a minimal loss of nutrients whenever fruits and veggies are processed, such as in cooking or heating. When produce is commercially frozen or canned, there is little time lapse between picking and freezing/canning, so the fruits and veggies are processed at their ripest. That’s why frozen and canned fruits and veggies are comparable in nutrient value to fresh.
